Heat oil in your pot, and add chopped onion, carrot, and celery. Cook for 4 minutes. Add chopped garlic, rosemary, thyme, and chilli flakes. Mix and cook for another minute.

Mix in flour, then gradually add the stock, mixing in between. Bring to a boil. Add a bay leaf and cubed potatoes. Let simmer for 20 minutes.
