Simple Tasty Toasted Crostini
This Crostini features juicy tomatoes, fragrant basil, and melted mozzarella, combined on top of crispy toasted bread.

- 1 large baguette
- 2 ripe tomatoes
- fresh basil leaves
- 200 gms of buffalo mozzarella
- olive oil
- salt to taste
- Ground pepper to taste

Preheat your oven to 180 degrees Celsius. While preheating, slice the baguette into 1.5cm thick rounds – a tip from my experience is to slice on the diagonal, so you get a larger surface area to place your toppings.
Place your sliced baguette rounds onto a baking tray and lightly drizzle with olive oil. Season with a bit of salt and pepper. It helps to ensure that each crostini gets a hit of flavor.
Toast the baguette slices in the oven for about 10 minutes or until they are golden brown and crispy. Be sure to check on them frequently as they can go from perfectly toasted to burnt quite quickly.
While the bread is toasting, dice your tomatoes and slice your mozzarella.
Once the bread slices are done, let them cool for a few minutes. Then top each slice evenly with the diced tomatoes and mozzarella. Adding a few chiffonade strips of basil also adds a nice touch, it's really all about the fresh flavors here.
Put the tray back in the oven and bake for another 5-6 minutes or until the cheese has melted wonderfully. Watch them closely to avoid burning.
Serve the crostini immediately. You can add a final drizzle of olive oil or balsamic glaze for that extra depth.
